You’ve heard about our Mocha Cheesecake, now meet the creative genius behind this decadent treat. Meet Saphia Mukansi, chef and master baker at Jackalberry Lodge.
Saphia was raised in a South African safari environment. She was born in Justicia which borders on Londolozi Private Game Reserve and grew up in nearby Lillydale. Both of her parents worked at Skukuza Rest Camp in the Kruger National Park.
When her 3 older sisters got married and moved out, she took over the role of caring for her 4 younger siblings. She soon discovered that she loved cooking, especially baking, for her brothers and sisters.
Following her Passions
It didn’t take Saphia Mukansi long to figure out that she could earn a living by combining her cooking talents with her love of the quiet bush environment. At first opportunity, she applied for training with Tsogo Sun and was accepted. She completed the practical part of her course at the Floreat Lodge in Sabie.
Her first job was at Elephant Plains Game Lodge in the Kruger National Park where she worked for 6 years before moving to Thornybush. Saphia’s experience at this private lodge prepared her for her role in the luxurious environment at Jackalberry Lodge.
Saphia has been with us for 3 years, during which time she has wowed guests and fellow employees with her outstanding baking skills.
Working at Jackalberry Lodge
While there’s never a dull moment at Jackalberry Lodge, her most hair-raising adventure so far was being chased by wild dogs while walking home.
While off duty (when she’s not racing the ‘local pack’ or enjoying the antics of her favourite bird, the lilac breasted roller) Saphia busies herself with even more cooking and keeping up with the latest fashions. She is passionate about food in all its forms and her love for cooking shows in the delicious meals she prepares.
Saphia Mukansi is a proud mom of a 4-year-old daughter and 2 sons aged 10 and 18. We look forward to enjoying Saphia’s culinary skills for many years to come and are proud to have her as part of our outstanding team at Jackalberry Lodge.
